Happies, I am so behind on everything I need to get done to run a business, still accommodate my voice over clients, create content (including turning in a book draft soon), sit on the board of a non-profit whose big gala event is less than a month away, launch the first annual Corkscrew Comedy Festival in my area, and oh…be a wife, mom, friend, human support to those in my network.
I cannot seem to catch a breath, and I committed to doing 365 days of meditation. Lemme tell you, that goal has been majorly challenged by my inbox screaming at me to do all the things.
Then I realized, I can’t NOT meditate.
There are too many things to do, and they all feel equally as urgent.
So what I’ve learned is to SHUT OFF my brain for 10 minutes (ok, maybe “pause” is a better word), close my eyes, and take a few breaths.
THEN, decide what needs to get done from a place of having chilled for a hot 10 minutes.

President’s Day weekend is upon us. Probably the most who-gives-a-shit of holiday weekends, but I don’t care. I need a day off. I need some comfort food. But I need to not go off plan. Who’s with me?
And now for the Whiskey Cheese. Simple to make, easy to eat.
I’m always in search of the most indulgent football party food I can invent, and this one might be in the top 5. It’s a rich dip, to say the least.

WHISKEY CHEESE
(Yields 2 cups)
1 tablespoon olive oil
1/2 cup diced onion
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
4 cups fresh grated extra-sharp cheddar cheese, brought to room temperature
3 tablespoons cream cheese, brought to room temperature
1/4 cup whole milk
1 tablespoon diced jalapeño, plus extra for garnish
2-3 tablespoons whiskey, to taste
Stove Top instructions:
Heat the olive oil in a nonstick sauce pan brought to medium high heat until shimmering. Cook the diced onion until soft. Add the onion powder, garlic powder, and salt until aromatic and the onion starts to brown. Turn the heat to medium and add the shredded cheddar, cream cheese, and milk and melt them, stirring often so the cheese does not harden or burn. Fold in the diced jalapeño. Stir in whiskey, 1 tablespoon at a time, to taste. Garnish with additional chopped jalapeño. Serve immediately with cut veggies or Rosemary Thyme Pita chips from Eat Happy Too.
Slow Cooker Instructions:
If you have a mini slow cooker, soften the onions in a stove top sauté pan per instructions above, then pour the onions and remaining ingredients into the slow cooker and cook on low for one hour until melted. Stir thoroughly and garnish with additional chopped jalapeño before serving.
