President’s Day weekend is upon us. Probably the most who-gives-a-shit of holiday weekends, but I don’t care. I need a day off. I need some comfort food. But I need to not go off plan. Who’s with me?
Enter Sloppy Joe’s. I don’t know if the next generation is familiar with this school cafeteria favorite, but let’s reintroduce it if they don’t know what it is.
Sloppy Joe’s are a version of simple chili with savory spices that stick to your ribs. Usually sloppy joes are loaded with sugar and are served with the kind of processed hamburger buns that dissolve the moment any liquid hits them.
I removed the sugar without any flavor consequences and paired them with optional low carb rounds, a cheesy take on my bagel rounds from Eat Happy Too.
As with any recipe of mine that calls for canned tomatoes and tomato paste, you can sub any flavor of Eat Happy Kitchen marinara with great success (or use a jarred marinara of your choice). I personally have been enjoying the Arrabbiata Spicy Marinara on just about everything.
