I think there's a step missing - after you whisk the chicken broth etc, what exactly do you do with it?

It was awesome! I realized a few hours in I forgot the tomato paste in the mix, but still very good. About 9 hours for a 2.25 lb roast; that was probably 30 min too long.

My mom has made pot roasts in the crock pot and they always seem dry and overcooked. I am going to try this. How do I know when it is done? I like my meat moist and squishy, if that makes sense. No dry hard stuff lol Should I use a meat thermometer? And, is it best to cook low and slow in your opinion?

This is the best roast I've made so far. I didn't have the dill or the anchovy paste, but it was still stupendous. I used an Instant Pot. I'll add the dill and anchovy next time. Also, thanks for sharing this for free. I heard you mention it on the podcast.
