Baked brie is a delicious throw back party food that reminds me of my catering days in the 90s. But making a low carb baked brie has not been something that has crossed my mind. First, we have the outer pastry to replicate, then the inside of traditional baked brie is usually filled with sugary jams or chutneys.
Until my childhood friend Faith had a PUMPKIN SHAPED baked brie on her stories…in truth, I died at the craftiness of it all.
I went into overdrive. I needed this recipe to happen. And oh boy did it ever.
