I know how to make a mean meatball. I have no shortage of recipes for meatballs, and my family classic is the one that graces the cover of Eat Happy Italian.

Meatballs are at once pedestrian and comforting all rolled into wee labor of love.

Nobody says no to a meatball.

And these French Onion Meatballs will blow your mind.

These are an idea that have been stewing in my head ever since being in France last September.

I think the algo knows my brain as well as my feed is hit with every French bread/melted cheese/ooey gooey cheese pull video known to man.

But all of those recipes are carb heavy, using a lot of processed ingredients.

So what’s a low carb gal to do? Make French Onion Soup, but in a meatball.

that sure is a pretty ball. And it tastes good too.
