I saw a viral video for frozen fruit ice cubes in cocktails and then put some holiday spin on that deliciousness…and kept the added sugar to ZERO, Happies
Just got back from Boston and NYC to schmooze and to bidnizzz to grow Eat Happy Kitchen. Now I have successive holiday parties, and I’m ready to get festive.
TODAY IS THE LAST DAY FOR BOGOGIFT25! All you have to do to get the discount is have an even amount of variety packs in your cart (sauces, spices, or cheese bites), so get on it.
And if you’re reading this after today. Sorry ‘bout that!
Now let’s make a cocktail. Here’s a link to the special ice cube tray I used, but you can use any kind.
Here’s the downloadable, printable version of this recipe.
Instructions are also below.
CHRISTMAS CRANBERRY COCKTAIL
(Yields 1 cocktail, but makes ice cubes for several cocktails)
1/2 cup fresh cranberries
1/2 cup cranberry juice (you must find no sugar added!)
Juice of a lime, plus lime wedges for garnish
1.5 ounces vodka, gin, or tequila blanco
Cherry or berry flavored soda water
Rosemary sprigs for garnish
In a specialty ice tray (I used this one), place a single cranberry in each well. Whisk together the cranberry juice and lime juice, and pour over the cranberries in the ice tray. Freeze overnight.
Make the cocktail: Fill a lowball, wine glass, or a Nick & Nora glass with a handful of the cranberry ice cubes. Shake or stir the vodka with ice and strain into the cocktail glass. Float the soda water to fill up the glass and garnish with a rosemary sprig and a squeeze of a lime wedge. Cheers!
