Our crispy, crunchy Cheese Bites are made and on the way to our California fulfillment center. They will ship on or around Monday 7/7 (hopefully sooner, but I hate making promises like that in case of delays).
While I’ve been making my homemade version of these snacks for years using cheese and Eat Happy Kitchen spice blends, you can’t exactly scale that up to be sold to folks across the country.
So I started calling companies that work with cheese until someone said yes, they see my vision and would like to partner with me. When you call companies (or meet them at trade shows), you learn a lot about what the outside world thinks of people with crazy visions or big dreams. Turns out, most people don’t want to be bothered with innovating clean food.
My attitude is always if I can think it up, there must be a partner out there who can make it a reality. And I found them in December 2023. Eighteen months later, we are launching a killer new snack, free from sugar, grains, gluten, preservatives or any kind of filler.

It’s hot mostly everywhere in the US by now.
I will actively avoid turning on the oven for obvious reasons.
That means figuring out ways to make sure we eat. And let’s keep it on the real real: salads are boring AF.
Inventing new salad dressings is one of my hobbies. One that I’ll eventually monetize when Eat Happy Kitchen launches dressings (soon, my darlings).
Until then, take matters into your own hands and make this Feta Dill Dressing.
Then chop up those gorgeous summer veggies, grab some grilled chicken, and slather this dressing all over everything…or just directly into your piehole.

BRIGHT CHOPPED SALAD WITH FETA DILL DRESSING
Salad:
(Serves 4)
6 cups chopped red leaf or butter lettuce
2 cups chopped baby spinach leaves
2 carrots, chopped
2 celery stalks, chopped
4 radishes, sliced
1/4 cup chopped red onion
1/2 red bell pepper, chopped
1/2 orange bell pepper, chopped
1/4 cup loosely chopped flat leaf parsley leaves
Feta Dill Dressing (see recipe below)
Assemble all salad ingredients in a large bowl. Toss with Feta Dill Dressing, or serve with dressing on the side.
Feta Dill Dressing:
(Yields 1 cup dressing)
1/2 cup crumbled feta cheese
1/4 cup mayo
1/4 cup olive oil
1 tablespoon freshly chopped dill
1 tablespoon white wine vinegar
Salt and pepper
Whisk together all ingredients until mostly smooth. Pour over the salad and toss, then serve.
Yummy! I didn’t have fresh dill, so I substituted your dill seasoning and used a full fat greek yogurt instead of mayo ( too hot & lazy to make mayo). Thanks so much for another great recipe!
